Red Cabbage Slaw with Pomegranate and Apples

The pomegranate (or red wine) vinegar base of this slaw is a mouth-puckering palate cleanser.

4-6 servings

  1. In a large bowl, mix together cabbage, apples, and pomegranate seeds.
  2. In a small bowl, stir together vinegar and sugar. Whisk in oil and season with salt and pepper.
  3. Drizzle vinaigrette over the slaw mix. Combine well. Let stand at room temperature for 1 hour, and toss before serving.
