At Chuko, in Brooklyn, Jamison Blankenship serves a riff on a popular Japanese drinking snack: mentaiko spaghetti. In his version, fresh ramen noodles are bathed in butter and spicy pollock roe, and then sprinkled with bacon, shiso, breadcrumbs, and nori.

Directions

  1. Boil a pot of water and cook the ramen according to the directions on the package.
  2. Once the noodles are cooked, drain well and place in mixing bowl. Mix in butter until creamy, adding pasta water to loosen if necessary. Mix in mentaiko and citrus. Taste for seasoning and place ramen in serving bowl.
  3. Top with bread crumbs, bacon, scallion, shiso, and nori.
