Marlow & Sons, Roman’s, Achilles Heel, She Wolf Bakery—the Marlow Collective became a Brooklyn institution. Now, 25 years later, he’s crossed the bridge, opening Borgo, his first Manhattan restaurant, on East 27th Street.
