If you could hear the oohs and ahhs when I bring this side dish to holiday parties. In their raw form, magenta-colored red scarlet turnips are vibrant and beautiful, but they gorgeously glow up when cooked in this sweet glaze. While white turnips mostly have a mildly sweet-peppery flavor, they often have a bitter edge. Scarlet turnips are slightly sweeter, and this vibrant glaze (a combination of raw cane sugar and molasses) plays off of them perfectly. Don’t worry, if you can’t locate red scarlet turnips, white will work just fine. Either way, these Brown Sugar—Glazed Turnips will be a standout.
Directions
- In a large skillet, combine the sugar, orange juice, 2 tablespoons water, the molasses, mustard pow¬der, and salt. Cook over medium-high heat, stirring, until all the sugar and the mustard powder have dissolved. Add the turnips, decrease the heat to low, cover, and cook, shaking the pan occasionally, until the turnips are just tender, 10 to 15 minutes.
- Remove the lid, raise the heat to medium, and cook, shaking the pan occasionally, until the turnips are glazed and turning golden, about 10 minutes. Remove from the heat.
- Squeeze the lemon over the turnips and season with salt and pepper. Transfer to a serving bowl and top with the parsley. Serve.
