Deep-Dish Supreme Skillet Pizza

It’s easy to make deep-dish Chicago-style pizza at home—all you need is a plain old cast-iron skillet. Use frozen pizza or bread dough to make it quick and easy on yourself (of course, if you’d like to use homemade dough, go for it!). Switch up the toppings any way you like.

1 12-inch pizza

  1. Toss the mushrooms, bell peppers, and onion with 1 tablespoon of the olive oil, and arrange on a broiler pan with the sausage. Broil 2 to 3 minutes, until browned. Remove from the oven and set aside.
  2. Place a rack in the lower third of the oven, and preheat to 500°F. Pour the 1/4 cup olive oil into a 12-inch cast-iron skillet, and swirl to coat the bottom and sides.
  3. Roll the dough into a circle bigger than the skillet. Transfer the dough to the skillet (to make this easier, roll the dough circle around the rolling pin, and then unroll it into the skillet). Roll the edges of the dough inward to make a thick rim, snug against the edge of the pan. Brush the crust with olive oil.
  4. Spread the pizza sauce evenly over the oiled crust. Top with the broiled veggies and sausage, mozzarella, Parmesan, and olives. Sprinkle with black pepper and crushed red pepper flakes. Bake 15 minutes, or until the crust and cheese are browned. Remove from the oven, cool 5 minutes, and serve sprinkled with chopped fresh basil.
