Roasted Honey Mustard Chicken
5 lb
4 tbsp
honey, softened
3 tbsp
yellow mustard
kosher salt
1 tbsp
Roasted Honey Mustard Chicken

The honey and yellow-mustard glaze on this roast chicken is just the right balance of sweet and tangy. But it’s the butter you baste the chicken in that makes it so unbelievably decadent.

4-6 servings

  1. Rub a roasting pan with 1 tablespoon butter and preheat the oven to 375°F.
  2. Remove the chicken giblets, rinse the chicken inside and out, and pat it dry. Liberally salt the inside of the chicken.
  3. In a small bowl, mix honey with mustard until smooth and yellow. Brush the outside of the chicken with the mix and sprinkle with salt. Place in a roasting pan, breast down.
  4. Bake for approx. 1 1/2 hours, or until the juices run clear when you cut through. While baking, rub chicken’s back, wings, and thighs with butter every 10 minutes. When all of the butter is gone, use a cooking brush to dip in melted butter at the bottom of the pan.
  5. Serve hot.
