fresh rosemary

filtered water

dark sugar (such as Okinawan black sugar, jaggery, or panela)
Bottle or two of good mineral water (like Vichy Catalan, Gerolsteiner, or if you absolutely must, Perrier)
Fancy Housemade Soda
Okinawa sugar and foraged rosemary meld together to yield a distinctly herbal, cola-like note in this house made aromatic soda. Skip the club soda and reach for a bottle of sparkling mineral water instead for a drink with boosted texture and mouthfeel.
1 pitcher
- Combine ingredients in a saucepan or Dutch oven. Bring to a boil, then reduce heat to simmer for 20 minutes.
- Strain and decant into a sterilized jar. Store in refrigerator for up to 2 weeks.
- Serve over rocks with mineral water and add fresh fruit or additional herbs if desired.
