Easy Chocolate Chip Oatmeal Muffins
These are seriously decadent muffins. Moist, intense chocolate overload! A healthy dose of wholesome oatmeal only makes them more scrumptious.

- Place a rack in the center of the oven, and preheat to 425°F. Line a 12-cup muffin pan with paper liners.
- In a medium bowl, whisk together the first 6 ingredients (flour through salt). Stir in 2/3 cup of the chocolate chips.
- In a separate large bowl, whisk together the next 5 ingredients (egg through vanilla). Add the dry ingredients to the wet, and fold in gently just until no streaks of the flour mixture show.
- Divide the batter evenly among the prepared muffin cups. Sprinkle the remaining 1/3 cup of chocolate chips evenly on top. Bake until a toothpick inserted into the center of a muffin comes out clean but still moist, about 15 minutes. Remove the pan from the oven, remove the muffins from the pan, and cool on a wire rack.
