Easy Chocolate Chip Oatmeal Muffins

These are seriously decadent muffins. Moist, intense chocolate overload! A healthy dose of wholesome oatmeal only makes them more scrumptious.

12 muffins

  1. Place a rack in the center of the oven, and preheat to 425°F. Line a 12-cup muffin pan with paper liners.
  2. In a medium bowl, whisk together the first 6 ingredients (flour through salt). Stir in 2/3 cup of the chocolate chips.
  3. In a separate large bowl, whisk together the next 5 ingredients (egg through vanilla). Add the dry ingredients to the wet, and fold in gently just until no streaks of the flour mixture show.
  4. Divide the batter evenly among the prepared muffin cups. Sprinkle the remaining 1/3 cup of chocolate chips evenly on top. Bake until a toothpick inserted into the center of a muffin comes out clean but still moist, about 15 minutes. Remove the pan from the oven, remove the muffins from the pan, and cool on a wire rack.
