cooked corn kernels (from 4 medium cobs or frozen corn, thawed)

mayonnaise

lime juice

Chorizo-Elote Hot Dogs
Creamy-spicy Mexican street corn makes the perfect summer hot dog topping. You can even add a crumble of cotija cheese if you like.

- Heat 1 tablespoon of vegetable oil in a medium frying pan, add chorizo and cook, occasionally stirring, for about 10 minutes until cooked.
- In a small bowl, mix corn, mayonnaise, lime juice, cumin, paprika, and cayenne.
- Cook the hot dogs according to the package directions.
- Place a hot dog in each bun and top with 1/4 of the corn, chorizo, and greens. Sprinkle with extra paprika and cayenne to taste.
