This recipe from Love and Knishes is a timeless Jewish dish, differing from the better-known potato pancake. Highlight its sweetness and serve with syrup, honey or a cinnamon-sugar mix. 

Directions

  1. Rub cottage cheese through a sieve. Stir egg yolks into the cheese. Add matzo meal and salt. Mix well. Beat egg whites until stiff and fold into the cheese mixture. Drop from a tablespoon onto a hot buttered skillet. Dry on both sides until lightly browned. Serve hot with syrup, honey or cinnamon-sugar mix.
