Black Rice With Fall Veggies

Frequently called forbidden rice, the black rice makes this side dish look spookier than it is. The combination of pumpkin (or squash), sage, and thyme makes it perfect for fall.

2 servings

  1. Cook the rice according to the instructions on the package (boil in 3 cups of salted water and simmer until done for about 40-50 minutes).
  2. In a frying pan, heat up oil, add veggies, herbs, salt, and sugar. Fry over medium heat, stirring often, until soft and golden brown. Discard sage and thyme.
  3. In a large serving bowl, mix together rice and veggies.
