Be Your Own Sausage Hero Spread

Be prepared for your kitchen to smell amazing. The scent of garlic and onion mingling with sausage juices will have your neighbors knocking on your door asking what’s for dinner (this actually happened). While I personally call it a sub, you are welcome to say that you’re having a sausage hero, roll, hoagie, or whatever you prefer. I know there are a lot of opinions about this, so I’m just going to say do what makes you happy. Whatever the brand of choice is, it’s really just a vehicle to enjoy this delicious spread. The broccolini addition makes it a more well-rounded meal, but even a salad does the trick.

4-6 servings

  1. Preheat the oven to 400°F.
  2. On a sheet pan, mix the onion and garlic with the olive oil and salt, then add the sausages and toss to coat. Prick the sausages all over with a fork and spread everything in an even layer. Cook until the sausages are well browned and reach an internal temperature of 160°F, 30 to 35 minutes, tossing the onion and garlic halfway through to mix them with the rendered fat.
  3. Transfer the sausage mixture to a board or large platter (or keep everything on the sheet to serve). You can either halve the sausages or let everyone slice them themselves. Arrange the sides and accompaniments in bowls and plates around the board, as desired.
  4. TIP You can roast the broccolini in the oven at the same time as the sausages on another sheet pan, and make the tomatoes on the stovetop.
