Super Simple Balsamic-Glazed Chicken
Reducing balsamic vinegar into a tangy-sweet drizzle takes it to a whole new next level. It’s great with pork, roasted veggies, or simple sautéed chicken breasts.
4 servings
- In a small saucepan, bring the first 4 ingredients (vinegar through sugar) to a boil. Reduce the heat and simmer until reduced by half, about 15 to 20 minutes.
- Meanwhile, place the chicken breasts in a gallon ziplock bag (or between two sheets of plastic wrap) and pound them to a fairly even 1/2-inch thickness. Season the chicken with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until browned on both sides (about 4 minutes per side). Remove to a serving platter or plates, and drizzle with as much of the balsamic reduction as you like.
