Asparagus Ribbons with Lemon Juice and Shaved Parmesan

This no-cook asparagus recipe is perfect if you don’t feel like turning on the oven or stove and want to toss something together without any muss or fuss. When thinly shaved, asparagus doesn’t require any cooking; it’s delicate enough to eat raw but still retains a refreshing snap. Parmesan shavings add a salty bite, and lemon juice brightens up the whole dish.

Directions
  1. Using a vegetable peeler (a Y-shaped peeler is easiest), working with one asparagus spear at the time, start from the bottom and shave each into long, thin, silky ribbons and transfer to a large serving plate.
  2. Using the same vegetable peeler, shave sheets of the Parmesan and place the shavings on top of the asparagus ribbons.
  3. Sprinkle the ribbons with fresh lemon juice and salt to taste. Serve immediately.
