This is the easiest ice cream recipe you’ll ever find. It only takes two ingredients and two steps—no stove top cooking or special ice cream maker required!
- Using a stand mixer with the whisk attachment in place, combine ingredients in the bowl and whip on high speed for about 4 minutes. The mixture will come to a soft peak stage. Stir.
- Cover with plastic wrap and place the mixing bowl directly in the freezer for about 6 hours. The consistency will be creamy but scoopable.
- Vanilla: To the unwhipped “batter,” add the scraped pulp of one whole vanilla bean pod and 1 tsp of vanilla extract.
- Coffee: To the unwhipped “batter,” add 1/2 spoonful of instant coffee and 1 tsp of coffee extract.
