A spin on the classic Japanese rice ball, Spam musubi is one of the most popular snacks in Hawaii, combining sweet and savory flavors in a warm, convenient wrap. This version counters the saltiness of the teriyaki-grilled Spam with the tartness of the pineapple and the heat of the wasabi, providing a blast of flavor in every bite.
Directions
- Cook rice in rice cooker, allowing for some wetness.
- Cut Spam lengthwise into quarter-inch slices.
- In bowl, combine brown sugar and soy sauce—the mixture should be roughly one part brown sugar to three parts soy sauce, but you can experiment.
- Grill Spam in brown sugar/soy sauce glaze over medium heat until a nice char forms on both sides.
- Place musubi mold on top of seaweed sheet.
- Spoon a scoop of rice into musubi mold, and press down. It should be about a quarter-inch layer.
- Place ingredients on top of the rice in following order: layer of furikake seasoning, slice of grilled Spam, three pieces sliced pineapple (or enough to form a layer), layer of furikake seasoning.
- Spoon another scoop of rice on top of this, and press down until musubi is packed firm.
- After removing mold, wrap the seaweed around like a tortilla. Seal the seaweed with a few grains of rice. Enjoy!
