Sweet Potato Skillet With Sausage and Eggs
Use a big skillet (at least 12 inches). Nobody’s going to walk away from this breakfast hungry! The cinnamon and sweet potatoes go great with the spicy sausage.

- Preheat the oven to 350°F.
- Brown the sausage in a large skillet over medium heat, breaking up the meat with a spoon. Remove the sausage from the pan and set it aside. Pour off any excess accumulated fat.
- Add the oil and onions. Cook, stirring occasionally, until the onions are browned, about 10 minutes. Add the sweet potatoes and cook, stirring occasionally, until crisp-tender, about 8 minutes.
- Add the garlic, salt, cinnamon, and chipotle powder. Sauté 1 minute. Stir in the broth, bring to a boil, and cook until mostly evaporated, about 2 minutes. Remove the skillet from the heat. Stir in the reserved sausage.
- Use a spoon to create 4 shallow wells in the sausage mixture, and crack in the eggs. Season with salt and pepper. Bake 25 minutes, or until the egg whites are set. Sprinkle with chopped fresh parsley or cilantro and serve.
